Cause I said in the last entry I'd post it.



  • 1 small box frozen, chopped spinach.
  • 1 small shallot
  • 2 cloves garlic
  • handful or so grated parmesan
  • 1/2 cup heavy cream (just a bit less actually)
  • 1tbs butter
  • 2tsp cornstarch
  • A touch of salt


Defrost the spinach and try to squeeze some of the water out. You want it decently dry if you can.

Melt the butter in a small saucepan. Chop the shallots and saute for a couple of minutes in the butter; chop the garlic or use a garlic press and add it in. Add the cornstarch and integrate with the butter. You want it to be a nice, loose paste--you don't want it too thick. Add 3/4 of the cream and integrate. Add the cheese, and finally add the spinach. Add more cream until consistency is like that of, well, creamed spinach. Serve warm.
