Costco is evil, because some of the time when I go there I come back with a 3 pound pack of fresh tilapia fillets which pretty much have to be cooked within a day, two at the outside, or they're gone. And the smallest packages I can get are usually 10 fillets. And naturally my expected dinner count was low, so there's lots of leftovers for this. Luckily tilapia makes great sandwiches, so lunch is taken care of for a bit. Unfortunately, Sprout doesn't really like the rice medley, she only likes white rice.
The tilapia itself was seared simply with a brush of butter, salt and pepper on my electric griddle. That is probably one of the finest kitchen gadgets I have ever purchased, if for no other reason than because it turns counter space into more stovetop space, but also is really wonderful for "pan" searing fish and chicken.
The rice is a little rice medley mix of brown rice, wild rice and red heirloom rice that we picked up at Costco. There's a small premium for the mix, but it's really nice. This one was a simple pilaf done in turkey stock, because I currently am sitting on a LOT of turkey stock. Seasoned with poultry seasoning, garlic and thyme.
Sliced up a half pound or so of crimini mushrooms and sauteed them in about a tablespoon of butter with some salt and garlic. When the mushrooms were ready, I added a tablespoon of flour and cooked it into a nice sticky roux, then 1/2 cup of turkey stock and 1/2 cup of milk. Simmered and basically this is just a mushroom gravy.
I took a 10 oz package of fresh spinach, wilted it in about half a tablespoon of olive oil with a clove or so of minced garlic and a sprinkle of salt.
Layer rice, then fish, then sauce, serve spinach on side. This would've been lovely with a sparkling wine. Would've opened a bottle of lambrusco if
esmerel could've drunk it, but not for awhile yet.
